Che's description of Cuzco was extremely detailed as he rambled on for about 15 pages discussing the area's history. Do some research on the city of Cuzco and give some reasons why you think Che devoted so much time to discuss the city.
I think Che saw the rich history that Cusco holds, and he especially saw the rebellious side of it. In his descriptions, he glorified the efforts of the native Incan people in standing up to the stronger and better equipped Spanish invaders. With this David vs. Goliath type history, Che was commenting on the underprivileged man's struggle throughout history.
I think Che was extremely interested in the city and how people managed to live years ago. He was enamored with how they created a city from nothing, a task he was trying to do himself.
